Chocolate ‘cheese’ cake

  • 1 cup of walnuts – ideally soaked overnight
  • ½ cup dates
  • ½ cup ground almonds
  • ½ cup desiccated coconut
  • 1 tsp coconut oil
  • 1/2 tbsp cacao
  • ¼ cup of unsweetened almond milk

Blend the dates, ground almonds and desiccated coconut to form the biscuit base. Line a small tin with greaseproof paper and gently press the mixture down to form the base.

Blend walnuts, coconut oil, cacao and almond milk. Whizz in a blender until really smooth. Spoon on top of the base and leave for ½ hour to set in the freezer. Again, delicious on its own or served with coconut yoghurt.
