Chicken Stir-Fry with Roasted Veggies.

This is a great dinner for using up leftover chicken. It’s simple and tasty adding lots of the ingredients that you need for a healthy, vibrant life.

Roasted Veggies

  • Cabbage, Red & White.
  • Carrots
  • Brussel Sprouts
  • Parsnips
  • Courgettes
  • Cauliflower
  • Broccoli
  • Coconut Oil

Wash and prepare all your veggies. Rough chop both red and white cabbage, peel and slice the carrots & parsnips, chop brussel sprouts in half, slice the courgettes, and chop some florets of broccoli and cauliflower.

Place them in a large ceramic dish and add about a desert spoon of coconut oil. Cover with a lid and place in the oven for about one hour on 180 degrees.

Roasted Sweet Potatoes

  • Sweet Potatoes
  • Dried Rosemary
  • Garlic (optional)
  • Coconut oil

Peel and chop the potatoes in large chunks. Place in a ceramic dish, add about half a desert spoon of coconut oil (depending on how many you are cooking) Sprinkle the rosemary over and add in chopped garlic, if you wish. Cover with a lid and place in the oven with the roasted veggies for approximately 50 mins.

Stir-Fry

  • Shredded Chicken (cooked)
  • Kale
  • Fresh Pineapple – diced
  • Desiccated Coconut (optional)
  • Apple Cidar Vinegar with Mother (optional)
  • Handful of Shitake Mushrooms
  • Coconut Oil

Half an hour before your veggies and potatoes are cooked, heat up half a desert spoon of coconut oil in a large wok or deep frying pan. Add the mushrooms and kale –  I put in quite a lot of kale as it does reduce down, but you can add in as much or as little as you want. I also drop in a few shakes of Apple Cidar Vinegar –  I like it for the health benefits, but it also helps to flavour the kale a little. (Leave that to cook through for about 10/15 mins, stirring occasionally. Chop up the fresh pineapple while you are waiting. When the kale is cooked add in the chopped pineapple and shredded chicken. If you want add in the desiccated coconut, this just gives a different slant on the flavour. Once the chicken is warmed through, turn down and leave on a low heat while you dish up the veggies and potatoes, arrange your stir fry on your plate and you have yourself a really healthy dinner that will be satisfying and totally delicious.
